Buttermilk Blueberry Cricket Pancakes


  • one cup of white flour
  • 1/4 cup of cricket powder (substituting for 1/4 cup of flour)
  • 2 tablespoons of sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 1/2 cup buttermilk
  • 1 tablespoon oil


Mix together dry ingredients. In a separate bowl, mix beaten egg, buttermilk and oil. Mix the wet ingredients together with the dry. Pour a small amount of batter onto a hot, lightly oiled griddle, and press frozen blueberries into each as they cook, and flip as each side browns. Enjoy!
