Apple Cheddar Cricket Bread



Heat oven to 375 F. Peel and shred apple. Press into paper towel to remove moisture. Heat oil in a skillet over medium low heat. Add shallots and apple and cook until soft, about 8 minutes. Stir occasionally. Stir in garlic. Cook an additional minute.

In a large mixing bowl, combine all purpose flour, cricket powder, sugar, baking powder, and salt. Stir with a whisk until all ingredients are well mixed. Add onion and apple mixture, sharp cheddar cheese, and hard cider. Stir just until all ingredients are combined and moist.

Spray a 9 x 5 inch loaf pan with cooking spray. Add batter and the pour over one tablespoon of melted butter. Bake for 30 minutes. Pour over additional one tablespoon of butter and return to oven and bake for an additional 25 minutes, or until toothpick inserted into loaf comes out clean.

Cool loaf pan on rack for 5 minutes before removing the bread. Then cool the bread completely on a wire rack.
